A crowd pleaser, perfect for when you meet that mid-afternoon slump. Pair with a brew if you can nab 5 minutes peace and quiet. Dairy free and completely delicious, the only struggle you’ll face is stopping at just the one.


  • 1/2 cup of all-natural peanut butter
  • 1/2 cup of light brown sugar
  • 1/4 cup caster sugar
  • 2 large eggs
  • 1/4 cup olive oil
  • 1/2 tsp vanilla extract
  • 2 cups plain flour
  • 1 tsp cornflour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2/3 cup choc chip
  • Extra sprinkle of salt to finish

  • Mix peanut butter, light brown sugar, caster sugar eggs, olive oil and vanilla extract in one bowl and in another sieve together the plain flour, cornflour, baking soda and salt.
  • Then thoroughly mix the dry ingredients in to the wet ingredients and lastly add the chocolate chips.
  • Line and grease an 8inch baking tray and press the cookie dough evenly in and bake for 15 minutes at 160 degrees
  • Once cooked and cooled remove from tin, sprinkle with flaked sea salt, cut into bars and enjoy!
