It’s the closest you’ll get to a tropical climate right now, with the exotic tastes of coconut, mango and passionfruit. Perfect to make ahead for a quick and delicious go to breakfast or lunch option or even to nibble throughout the day, ideal if you have an older child who claims to be hungry 526 times a day. Ingredients 1 and a half cups of oats 1/4 cup of chia seeds 1/4 desiccated coconut 300ml coconut water 2cups natural yoghurt 1tsp vanilla essence Juice of one lime Toppings Fresh mango, shaved coconut, passion fruit, raspberries and honey Add all the ingredients of the sunshine Bircher into a container and mix together. Cover with lid and put in fridge overnight. The next day, put Bircher in a bowl and add all the yummy toppings!
