A bright sunny pick me up in these dark cold winter months. It’s the closest you’ll get to a tropical climate right now, with the exotic tastes of coconut, mango and passionfruit. Perfect to make ahead for a quick and delicious go to breakfast or lunch option or even to nibble throughout the day, ideal if you have an older child who claims to be hungry 526 times a day.

  • 1 and a half cups of oats
  • 1/4 cup of chia seeds
  • 1/4 desiccated coconut
  • 300ml coconut water
  • 2cups natural yoghurt
  • 1tsp vanilla essence
  • Juice of one lime
Toppings

Fresh mango, shaved coconut, passion fruit, raspberries and honey

Add all the ingredients of the sunshine Bircher into a container and mix together. Cover with lid and put in fridge overnight. The next day, put Bircher in a bowl and add all the yummy toppings! Voila
