4 cups oats
4 cups rice crispies
8 tablespoons of butter
1/2 cup brown sugar (coconut sugar works too)
2/3 cup honey
1 tablespoon of vanilla
pinch of salt
1/2 cup mini chocolate chips


1. On a sheet pan, toast the oats in the oven for a few mins at 350 degrees.

2. In a saucepan over medium heat, melt butter, brown sugar, honey and salt together and stir until the sugar dissolves. let simmer for 2 – 3 minutes. Remove from heat and stir in vanilla and allow to cool slightly.

3. Combine toasted oats and rice cereal in a large bowl. Pour honey mixture on top and stir to coat. Allow to fully cool before stirring in chocolate chips.

4. Line a 12 x 16 cookie sheet with plastic wrap and spread oat mixture evenly (buttered hands help prevent sticking!)

5. Even everything out with a rolling pin, using the cookie sheet as a guide. Leave at room temp for a few hours before cutting.

*Refrigerating speeds up the process but it makes the bars more prone to crumbling.

*Store in an air tight jar.
