1 tin of line-caught, good quality tuna (our tin was 160g)
1/4 red onion, finely diced
1 pickle, finely diced
2-3 tbsp mayonnaise
2 tsp dijon mustard
1 tsp white wine vinegar (or red wine works too)
1 large slice of sourdough bread
Cheddar cheese or mozzarella, for topping
Chive, to top (optional – dill would be good too!)


1. Preheat the grill to high. In a bowl, add the tuna, onion, pickle, mayo (start with 2 tbsp and see if it needs more after), dijon, vinegar, salt and pepper.

2. Mix well and adjust for seasoning/consistency, if it needs more mayo.

3. Take a slice of sourdough, and place under the grill to toast. Once lightly toasted, remove from the oven.

4. Spread on the tuna, top with as much grated cheese (we used mozzarella) as your heart desires.

5. Grill until bubbly and melted.

6. Top with chive or spring onion and enjoy piping hot!
