TMC Recipe Of The Week: Orange, Oat and Raisin Cookies

There’s nothing like the smell of freshly baked cookies filling up your home. Delicious and chewy oatmeal, orange and raisin cookies – crisp on the edges and gooey on the inside with a hint of nutmeg, burst of orange and a cheeky drizzle of honey for some extra sweetness.

Ingredients

Makes 10 large cookies

1 Egg
1 1/2 cup Rolled Oats
3/4 cup Plain Flour
½ cup Unsalted Butter
1/2 tsp Baking Soda
2/3 cup Light Brown Sugar
1/8 cup Granulated sugar
1 cup Raisins
3/4 tsp Cinnamon
½ tsp Nutmeg
Rind and Juice of 1 Orange
1/4 tsp Salt
1 tsp Vanilla extract

Method

  • Preheat oven to 180°C. Line a large tray with parchment paper
  • In a large bowl, cream together the butter, brown sugar, granulated sugar, egg and vanilla until smooth and creamy. In a separate small bowl whisk dry ingredients – flour, baking soda, cinnamon, and salt. Add the dry ingredients to the butter/sugar mixture. Combine well and stir in the oats, raisin, orange rind + juice.
  • Place dough in fridge to cool for at least 1 hour
  • Using ice cream scoop, or two spoons, scoop dough into round balls and place on prepared baking sheet, leaving about 2-inches between each cookie. Bake them for 12 minutes. Take them out when they are golden at the edges but still a little under baked in the middle. Let them sit on the hot baking sheet for five minutes before transferring them to cooling rack.
