Post author By The Mum Club Post date 18 December 2023 TMC Family Recipe Of The Week: Gingerbread Men Ingredients: 225g plain flour, plus extra for dusting ½ tsp salt 2 tsp bicarbonate of soda 1 heaped tsp ground ginger ½ tsp cinnamon 50g unsalted butter 100g soft brown sugar 100g golden syrup Method: STEP 1 Heat oven to 190C/170C fan/gas 5 and line a baking tray with baking parchment. Sieve the flour, salt, bicarb, ginger and cinnamon into a large bowl. Heat the butter, sugar and syrup until dissolved. Leave the sugar mixture to cool slightly, then mix into the dry ingredients to form a dough. Chill the dough in the fridge for 30 mins. STEP 2 On a surface lightly dusted with flour, roll out the dough to a ¼-inch thickness. Stamp out the gingerbread men shapes with a cutter, then re-roll any off-cuts and repeat. Place your gingerbread shapes on the lined trays, allowing space for them to spread. Cook for 10-15 mins, then remove from the oven and leave to cool. When You Can’t Be Arsed to Bake 1. Ingredients… 1 heaped tbsp of baking powder Potatoes (as many as you like) Cooking oill Rosemary and garlic – if you want even more flavour Method… 1. Turn the oven up to 200C. Peel & chop your potatoes. The little ones are the best so make sure you cut a few smaller ones. 2. Add to a large pot of salted, cold water. Add 1 heaped tbsp of baking powder and stir it through. 3. Par boil for around 8-10 minutes or until a knife easily goes through, but doesn’t break the potato. Drain the potatoes (you can be a little rough with this, give them a good shake around to fluff up the edges – these will be the crispy bits!) 4. In an oven tray (flameproof if you have a gas hob – metal works best!) add around 2cm of oil & heat over the hob. Please be VERY careful and don’t do this when kids are around, it gets unbelievably hot. Use tongs & add the potatoes to the hot oil. Crisp one side & then coat the potatoes in the hot oil. You can add rosemary or garlic here if you like. 5. Pop into the oven for around 45 minutes, season generously with sea salt & thank me later! Merry Christmas! Prepare them the night before WITHOUT part-roasting them (this means getting them to the point where you could put them in the oven, pop them in the fridge instead, then all you have to do is roast when you’re ready to). Prepare them further in advance and freeze them (you can get them to the point where they’re ready to roast, but freeze them instead, until it’s time and then you can defrost them and cook as normal.

Our other table’s varnished top has started to wear. So, I was looking for a better-made table that would last longer. The fact that you can switch the top so easily is brilliant. My eldest even does it himself and loves building Duplo and drawing on the board. We’ve started using it for mealtimes, so I need to invest in the silicone top, but unlike the cheaper product we had before, it’s great to know that elements can be easily replaced if something is damaged. It’s quite an expensive item, but I love that it can be adjusted and adapted as they grow, and it looks stylish, so I’m happy for this one to stick around. Is it good value? It’s undoubtedly expensive, but as with all well-made furniture, you get what you pay for. Stokke also often has sales or clear-outs on accessories that fit the Mu Table, so it’s worth watching for them as you can get a bargain. Would you recommend it? Absolutely. I was hesitant over the price, but now that we have it in our home, it makes sense to me as it can be used for many things, and we’re already planning which new accessories to add as Christmas or Birthday presents. When the box arrived with fun, colourful packaging and a sheet of stickers, we were already off to a good start. What was it like? First meal up was Hey Presto Chicken Pesto! Coming from a child who, majority of the time, will only eat meat if it’s shaped like dinosaurs and covered in breadcrumbs, I was unsure how this would go down but she loved it! The carrot and potato ‘chips’ were a win too and luckily the portion size was enough for seconds. The Tuna Bakey was another huge hit and I love that this one is packed with hidden veggies in the sauce. There are also side pots of greens which are really useful for additional veg. Would you recommend it? Definitely! We got to a point where my little one was excited to choose her next meal and I can’t tell you the relief of knowing dinner time can now be simple, she’s getting the nutrients she needs, and on top of that, the fact that the meals are frozen is a game changer. Because how much easier is mum life when there’s a healthy, delicious and very nutritious meal prepared in the freezer that only takes a few mins to heat?!
