But do leave yourself enough time…and my top tip is to start at the TOP and work down (the play area is at the bottom, so you won’t be able to get them out!

TMC Family Recipe of the Week: Creamy Tomato Soup + Grilled Cheese

Ingredients

Creamy Tomato Soup

2 tablespoons plant-based butter regular works too
2 1/2 tablespoons olive oil divided
2 large carrots diced
1 small sweet or white onion diced
1 tablespoon coconut sugar
1-1/2 teaspoons salt divided
3-4 cloves garlic finely chopped
2 tablespoons tomato paste
1 tablespoon Italian seasonings
1 tablespoon flour
1 28 oz can whole San Marzano tomatoes with basil and garlic not drained.
1 28 oz can crushed tomatoes
1 1/2 cups chicken or veggie broth
1 1/2 tablespoons balsamic vinegar
2 bay leaves
1/4 cup heavy cream optional
3 cheese grilled cheese

8 slices whole grain bread
4 slices sharp cheddar
4 slices havarti
4 slices smoked gouda
2-4 tablespoons plant based butter softened, regular works too
1 teaspoon garlic salt

Method

1. Sauté Veggies. Add the butter and olive oil to a large pot over medium heat until butter is fully melted.
Sautéed onions and carrots. Add in the diced carrots and onions and cook for about 5–6 minutes, stirring occasionally. Season veggies with 1/2 teaspoon salt and add in sugar and stir until sugar is fully mixed in with veggie mix Cook for another 7-9 minutes or until onion and carrots are golden brown and caramelized.


2. Add in seasonings. Add in the garlic, tomato paste, and Italian seasoning and stir for another 1-2 minutes or until the paste begins to brown and turn a slight rusty color.

3. Add in Flour. If pan seems dry, add another 1/2 tablespoon of olive oil. Then add flour, cook for another 1 minute.
Add liquids. Pour in the tomatoes, chicken or veggie stock, balsamic vinegar and bay leaves and again season to taste. I add another 1/2 teaspoon salt and 1/4 teaspoon pepper. Increase heat to high and cook fo 8-10 minutes.
Blend. Using an immersion blender, blend the soup until velvety smooth. Or carefully transfer the mixture to a blender, and blend on high until smooth. Return to the pot, Taste and season again to you liking. 


4. Make it creamy. Return the pot to low heat on the stove and stir in cream. Taste once again for any additional seasonings needed.

5. Assemble the grilled cheese. Spread desired amount of butter on one side of each slice of bread and season with garlic salt. With butter side down, top each slice of bread with one slice of each kind of cheese. Top each sandwich with other slice of bread, butter side up.

6. Make the grilled cheese. In a skillet over medium heat, add 1 tablespoon olive oil. Add sandwiches to the pan, being careful not to overcrowd the pan. Cook for 2-4 minutes, or until first side is golden brown. Flip and top skillet with lid (this helps cheese fully melt and become gooey). Cook for another 2-3 minutes or until second side is golden brown. Repeat until all sandwiches are cooked, wiping skillet clean if necessary.

7. Enjoy! Serve warm grilled cheese with a bowl of soup.

“I booked The Farmhouse at Wilderness Reserve for my 30th birthday with some friends and family. From the moment we arrived, I was made to feel special. A bottle of champagne in the fridge with a handwritten ‘Happy 30th Birthday’ note and a homemade Victoria sponge on the side meant this place was seriously ticking my boxes. I’m clearly more easily pleased than my husband would accept or believe. The grounds are beautiful, and the interiors are breath-taking. There’s also a huge lake you can row boats on, just like The Notebook, but with screaming kids. Set in the picturesque countryside, you get around on classic peppermint-coloured bikes. It is an Instagrammers haven *but luckily, we didn’t see any in the wild. Being in a big group made it for me, cooking feasts together and eating around the huge farmhouse table. Then once the kids went to bed, the party continued. It was just brilliant. My cup was filled. I absolutely would go again, but it would have to be for a special occasion to justify the cost.”

From the grand Grade II listed manor house and restored 15th century barn, to charming, thatched cottages and romantic retreats, Wilderness Reserve is a long-term conservation and restoration project – protecting English nature and breathing new life into historic properties.”

“There’s no denying that a stay here is costly. But you get what you pay for. It is stunning and private. They can cater for every need: breakfast boxes, private chefs, paddle boarding lessons, fire feasts, spa treatments – the list is endless. I’m pretty sure they wouldn’t refuse any requests, but it does come at a cost. That being said, you can just go and enjoy the setting. There’s the lake, bike rides and a very scenic outdoor pool and hot tub all included in the grounds. We lucked out and managed to walk past an archery demonstration where they let us come and have a go for half an hour and ate low of free snacks and gin. We managed to get it for free, but it would have cost £75pp if we’d booked. I did book the breakfast hamper for our stay, which gave us enough food for the following three meals (and we were catering for big rugby players). So, stingy, they are not.”

TMC Family Recipe Of The Week: Chocolate Mug Cake

Ingredients

3 tablespoons coconut oil (or olive oil/rapeseed oil)
1 egg, at room temperature
3 tablespoons milk
1/2 teaspoon vanilla extract
2-4 tablespoons honey, maple syrup, or granulated sugar
1/4 cup plain flour
2 tablespoons unsweetened cocoa powder
1/4 teaspoon baking powder
1/4 teaspoon salt
1 tablespoon brewed coffee
28g semi-sweet chocolate chunks, very roughly chopped

Method

1. Melt the coconut oil in a big microwave-safe mug. Whisk in the egg, milk, vanilla, and honey until combined. Add the flour, cocoa powder, baking powder, and salt, stirring until just combined.

2. Spoon the coffee into the center of the batter and gently swirl it in. Do not fully incorporate the coffee. Place the chocolate chunks in the center of the batter.

3. Microwave on full power for 1 minute 45 second to 2 minutes (I always do 2 minutes). Dig your spoon deep into the cake to spoon up melted chocolate with every bite. Serve with ice cream. ENJOY.
