TMC Family Recipe of the Week: Fruit & Veg Ice Lollies

These zero-sugar fruit and veggie lollies are delicious and not only a healthy treat but will also soothe sore gums if your little one is teething.

Ingredients

Strawberry, Beetroot and Apple Lollies

50 g/2 oz cooked beetroot, peeled and diced
70 g/3 oz strawberries, chopped
50 ml/2 fl oz apple juice

Carrot, Kiwi, Mango, Banana and Orange Lollies

25 g/1 oz kiwi, peeled and diced
50 g/2 oz ripe mango, diced
50 g/2 oz ripe banana, peeled

Method

1. Put all the ingredients into a jug. Blend using a stick blender until smooth.

2. Pour into 6 lolly moulds and freeze for 6 hours.

The Learning Tower Company Little Bear Folding Chair has genuinely made my life so much easier. My son is a foodie, whenever I’m in the kitchen he’ll be at the stair gate, howling at me for food regardless of the time. Since we got our learning tower, things have been so much easier. Letting him see what I’m doing in the kitchen and help prepare his food has taken away so much stress (and crying). The best feature is that it folds up so at the end of the day it’s not taking up space in my small kitchen.

What is it? And how do we use it?

A learning tower to bring toddlers and children to ‘grown up’ height to interact with everyday activities. We use it in the kitchen to bring him into the process of meal preparation. It’s been great for his development, and I have found my son tries foods he wouldn’t normally as he is now part of the process.

Yes, I believe it’s one of those ‘investment’ pieces, as it is something he’ll continue to use as a toddler and young child.

I recommend it if you find meal times stressful, have a hangry toddler or just want to bring your child up to your level to join you. It’s a great tool to have and think the ease of having it fold down is great for those with limited space.

TMC Family Recipe of The Week: Summer Burrata Salad

Ingredients

3 cups Rocket
2 ripe peaches, sliced
1 cup cherry tomatoes 1/2 small red onion, thinly sliced
1 large burrata cheese
extra virgin olive oil

BASIL MINT VINAIGRETTE

1/3 cup extra virgin olive oil
1/4 cup fresh basil leaves, chopped
1/4 cup fresh mint leaves, chopped
juice and zest of one lemon
1 tbsp honey
1 tsp dijon mustard
1/4 tsp pink salt or to taste

Method

1. Drizzle sliced peaches with extra virgin olive oil and toss to combine. Grill for about 2-3 minutes per side or until grill marks appear.

2. In a mason jar combine all the dressing ingredients. Shake to combine.

3. Assemble the salad. On a large platter layer arugula, grilled peaches, tomatoes, red onion and torn up burrata cheese. Drizzle with basil mint vinaigrette right before serving.

Two words: GAME CHANGER. I had to start topping up my breastfeeding feeds with formula as I wasn’t producing enough milk for my son. This machine has been a lifesaver. It prepares a bottle in 2 minutes at the perfect temperature. I would recommend it to any new parents. This honestly makes life so much easier. The only downside is that the smallest bottle it makes is 4 oz – so a lot of wasted milk, especially in the early days.

What is it? And how do we use it?

This is a great concept and is like an espresso machine for formula. No more waiting for kettles to boil and cool down. Just add your formula to the bottle and follow the clear step-by-step instructions on the screen, which is invaluable when tiredness during night feeds takes over. So easy to use and means that partners and even friends and family can help out with feeds.

I love this face cream! It’s brilliant for dry stressed-out skin and is also moisturising enough to use as a night cream – which makes life much easier when I’m travelling. It also contains the magical ingredient Niacinamide, which helps to improve a more even complexion and has definitely reduced my pregnancy pigmentation. And if that wasn’t enough! The packaging doubles up as a toy for my son to play with while I attempt to get ready.

I think it’s great value as a little goes a long way and it also doubles up as a night cream, which means I don’t have to buy two different creams and ok I’m using it more as I’m using it in the evening too but I see this as a win overall as it saves me time and thought, which is something money can’t buy.

TMC Family Recipe of The Week: Apple Fritters (For Babies)

Ingredients

1 medium apple (about 1/2 cup grated)
1 egg
2 tbsp plain flour
¼ tsp baking powder
¼ tsp ground cinnamon
oil/butter to grease pan

Method

1. Preheat a frying pan over medium heat.

2. Grate the apple using the largest hole of a grater. You will want to have about 1/2 cup of grated apples.

3. Add the grated apples to a bowl along with the egg, flour, cinnamon, and baking powder. Mix until combined.

4. Add 1 tablespoon of butter/oil to the preheated pan. Add one tablespoon of the apple mixture to the pan and press down lightly to form a mini fritter shape.

5. Cook the fritters for 2-3 minutes per side, or until golden on both sides.

Spring Burrata Salad

Burrata is never not a good idea…

Ingredients…

1/2 lb fresh burrata
1/2 lb cantaloupe, sliced into crescents
1/4 lb prosciutto
2 heirloom tomatoes, thinly sliced into rounds
a few fresh figs halved or peach slices
handful fresh basil, roughly torn
extra virgin olive oil
balsamic vinegar
sea salt
cracked black pepper

Method…

1. Place the burrata rounds on the platter, either just one in the center or around the platter depending how many rounds you have.

2. Wrap each wedge on the melon in the center with a strip of the prosciutto.

3. Alternate layering the tomato slices and cantaloupe slices around the burrata.

4. Tuck in the figs or peach slices in the remaining gaps.

5. Sprinkle fresh basil over the top.

6. Add a good glug of extra virgin olive oil and a splattering of balsamic vinegar.

7. Season with a pinch of sea salt and cracked black pepper.

I love this highchair. It’s so sturdy, feels very secure, and supports my son well. It blends into the home and is the perfect height to place at our dining table. Unlike other highchairs, it doesn’t sit in the middle of the kitchen getting in the way. It also comes with a 10-year warranty, which I think is incredible and really makes you trust the brand. Parenting can become extremely expensive, so knowing that we have made that investment which will see us through our son’s childhood is great.

It is an expensive addition, but if you were to break down the costs of purchasing a highchair, a rocker and a young child’s chair, as well as the added features like the toy bar, it suddenly seems very affordable. Especially when you consider that it is so stylish, and all the components look great in the home.
