The aaah there’s nothing in the fridge for dinner option.

Easy peasy and never not great.


1 tbsp olive oil
1 garlic clove, crushed
400g can chopped tomatoes
1 tsp vegetable stock powder or ½ crumbled stock cube
1 tbsp tomato purée
1 tsp sugar
A few basil leaves or a pinch of dried basil (or if you don’t have those you can use any Italian style herbs)


1. Heat the olive oil in a pan, add the crushed garlic, then gently fry for 1 min.
2. Tip in the chopped tomatoes, vegetable stock powder, tomato purée and sugar, then bring to the boil.
Reduce the heat, then simmer uncovered for 5 mins, stirring occasionally.
3. To finish, tear a few basil leaves, then stir into the sauce.

*Add to any pasta you choose and serve with extra cheese!
